2 tbsp margarine
1 pound mushrooms, cleaned and sliced
1/2 medium onion, chopped
1 (141/2 ounce) can beef or chicken stock
1 can water
white pepper to taste
1/4 c cream or half and half
3 tbsp parsley

Directions:
Directions:
In large saucepan, melt margarine over medium heat. Saute mushrooms and onion until onions are translucent. (reserve about 1/4 of the mushroom and onions to add whole to the soup later, if you wish.) Add stock, water and potatoes, and bring to boil. Turn down heat and simmer until potatoes are tender, about 20 minutes.

Place in blender and blend until vegetables are pureed. Return to saucepan over low heat. Stir in white pepper, reserved mushrooms and onions and cream or half and half. Heat a few minutes longer, but don't allow soup to boil.
