"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Chocolate Chip Banana Mini Muffins, by Laura McDonnell, is from A Girlfriends Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Use 4 mini muffin pans and line with mini baking cups. Combine all ingredients except mini chocolate chips and walnuts in large mixer bowl; blend well on medium speed. Stir in mini chocolate chips and walnuts. Fill each mini muffin halfway. Bake at 350 degrees for 18-20 minutes or until tester comes out clean. Cool 10 minutes; remove from pans. Cool completely on wire rack. These are great to freeze and have around for those unexpected play dates!!!
