2c. unsifted all-purpose flour
1c. sugar
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1c. mashed ripe bananas (about 3 small)
1/2c. shortening
2 eggs
1c. Hershey's mini chips semi-sweet chocolate
1/2c. chopped walnuts (optional)

Use 4 mini muffin pans and line with mini baking cups. Combine all ingredients except mini chocolate chips and walnuts in large mixer bowl; blend well on medium speed. Stir in mini chocolate chips and walnuts.
Fill each mini muffin halfway. Bake at 350 degrees for 18-20 minutes or until tester comes out clean. Cool 10 minutes; remove from pans. Cool completely on wire rack.
These are great to freeze and have around for those unexpected play dates!!!
