1 cup Bisquick baking mix
1/2 cup shredded mozzarella or cheddar cheese
1/8 teas. salt
2 eggs, beaten
2 cups shredded zucchini
2 tbsp. chopped onion
1 tbsp. butter

Directions:
Directions:
Combine bisquick, cheese, salt, eggs, zucchini and onion in a bowl and blend well. Melt butter in a large skillet. Spoon heaping tablespoons of the zucchini mixture into the skillet. Fry for 3-5 minutes per side until golden brown. Drain on paper towels. Add more butter to skillet when necessary for additional batches.
