l lb. ground beef or pork
1 large onion, chopped
1 closve garlic, minced
1 can (14-1/2 or 16 oz.) tomatoes, undrained and chopped
3/4 cup picante sauce
1 large green pepper, chopped
1 teas. ground cumin
1 teas. salt
8 oz. frozen diced hash brown potaotes (thawed)
1-1/2 cup shredded cheddar cheese

Directions:
Directions:
Brown meat with onion and garlic in skillet. Drain if necessary. Stir in tomatoes, picante sauce, green pepper, cumin and salt. Simmer uncovered 15 minutes or until most of liquid is absorbed. Stir in potatoes and 1 cup of the cheese. Pour into glass baking dish. Bake @ 350 for 30 minutes or until heated through. Sprinkle with remaining cheese and let stand a few minutes before serving.
