1-1/4 lb. shrimp (cleaned and boiled) 3/4 cups cooked rice 1 can cream of mushroom soup 1/2 tbsp. lemon juice 1/2 large onion (chopped) 1 tbsp. butter dash of garlic salt or powder salt & pepper to taste 3/4 cup grated cheddar cheese 1/2 cup sour cream
Saute onions in butter. Add soup, lemon juice and seasonings. Fold in rice, shrimp and sour cream. Put in glass baking dish and sprinkle cheese over top. Bake @ 325º for 30 minutes.
