Mom's Rice Pudding Recipe

2 cups water
1 cup rice
1 teas. salt
1 tbsp. butter
1 cup milk
1 small can crushed pineapple
1 stick butter
4 whole eggs
2 egg yolks
6 heaping tbsp. sugar

6 egg whites
pinch of salt
6 tbsp. sugar
1 teas. vanilla
1/4 teas cream of tartar

Cook rice in water with salt and tbsp. butter until water is absorbed. Add milk and cook until absorbed. Add the stick of butter, whole eggs, sugar and pineapple. Simmer for about 10 minutes. Put into glass baking dish and bake @ 350 for 10 minutes and set aside. For the meringue, start beating eggs. Add salt, cream of tartar and sugar and beat until thick & peaky. Spread on top of rice pudding and bake @ 350 until lightly browned.
