Mix together:
2 c. sugar
1/2 c. Crisco
2 tsp. vanilla
1 stick butter
5 egg yolks (one at a time)

Mix together:
1 c. buttermilk
1 tsp. baking soda

Mix together:
2 c. flour
1/2 tsp. salt

Add:
2 c. flake coconut
1 c. finely chopped pecans

5 egg whites, beaten to stiff peaks

Icing:
8 oz. cream cheese
1 stick butter
1 c. pecans
1 box sifted powdered sugar
1 tsp. vanilla
1 c. coconut sprinkled between the layers

Directions:
Directions:
Mix ingredients together as stated above. Add flour and buttermilk mixtures alternately into sugar mixture. Then add coconut and pecans. Fold the stiffly beaten egg whites into the cake mixture. Bake in 3 layers at 350 for 30+ minutes. Frost, sprinkling coconut in between layers.
