1 1/2c. oil
2c. sugar
3 eggs
1 tsp. vanilla
3c. flour
1 tsp. cinnamon
1c. chopped nuts
1 tsp. salt
1 tsp. baking soda
3 apples, peeled and cubed

Blend oil and sugar. Add 3 eggs and vanilla and beat together.
Blend flour, cinnamon, nuts, salt, baking soda and add to mixture, stirring until well blended. Add apples and blend well. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour 15 minutes. Will be crispy on top.
Cool and turn out of pan. Serve plain or with ice cream, or sprinkled with confectioner's sugar.
