2 small ripe bananas
1 small instant vanilla pudding
l/4 C Oil (or Applesauce for low fat version)
l C Sour Cream (or non-fat sour cream)
l Yellow Cake Mix
4 Eggs (or 8 egg whites for low fat version)
l/3 C Chopped Nuts (I use almonds)

Directions:
Directions:
Slice bananas into lg. bowl and mash well. Add remaining ingredients and blend on low speed, then increase speed to med. and beat two minutes.
Spray Bundt pan with Pam and sprinkle w/powdered sugar. If you donít want nuts all through the cake, sprinkle a few in bottom of pan and cover with batter.
Bake at 350ļ for 60-70 minutes - Cool for l0 min and dump upside down on rack to cool. Cake should just slide out. The powdered sugar gives a sweet glaze effect and no frosting is needed.
