2 heads garlic, whole
1 tsp. olive oil
4 lb. potatoes
1 stick butter
1 1/4 c. heavy cream

Directions:
Directions:
Heat oven to 425 degrees. Slice tops off garlic heads, coat with olive oil. Wrap heads in aluminum foil and bake until tender about 45 minutes. When cooled, peel and set aside. Place potatoes in cold salted water, bring to a boil and cook until tender, about 12 minutes. Heat butter and cream until melted and hot, add garlic. Pour mixture over mashed potatoes, season with salt and pepper.

You can also add shredded cheese to this. Place in a baking dish with more cheese on top and place in oven until cheese is melted.
