2 stalks celery - chopped
1 large onion - chopped
1 clove garlic - minced
1-2T. oil
salt & pepper
1-1 1/2 lbs. chicken breast
2c. chicken broth
1c. rice

Saute celery, onion and garlic in oil. Top with chicken. Pour in chicken broth. Salt and pepper to taste.
Bring to a boil; lower heat to medium. Cook for 15 minutes. Bring back to boil; add rice. Reduce heat, cover and cook until broth is absorbed, about 30 minutes.
Note: I like College Inn's roasted vegetable
broth - but anything will do.
