1 cup oats uncooked
3 tbsp milk powder
2 1/2 cups all purpose flour
1 cup firmly packed brown sugar
1 tbsp baking powder
1/2 tbsp baking soda
1/2 tsp ground cinnamon
2 pieces medium carrots shredded
1/2 cup raisins
1 cup crushed pineapple undrained
4 pieces egg whites
1/4 cup vegetables oil
1 tsp vanilla extract

Directions:
Directions:
Heat oven to 350 F. Grease bottoms of loaf pan with cooking oil . In a medium bowl, combine oats, and milk set aside. In a large bowl, combine flour, sugar, baking powder. baking soda and cinnamon mix well. Stir in carrots and raisin set aside add pineapple crushed including juice, eggwhites oil and vanilla to oats mixture mix well. Add to flour mixture, stir just until moistened do not over mix . Pour into loaf pan. Bake for 1 hour or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan. Remove to wire rack. Cool completely
