1 c. oats
1 1/4 c. non fat yogurt
1/4 c. oil
3/4 c. brown sugar
1 egg
1 c. flour
1/2 teas. salt
1 teas. baking soda
1 cup chocolate chips or frozen/ fresh fruit.


Directions:
Directions:
Mix and soak oats and yogurt together for 10 minutes.
Add oil, brown sugar and egg to yogurt mixture.
Mix dry ingredients together and then add to yogurt
mixture.
Add choc or fruit.

Put in greased muffin tins. 400 for 20 minutes.

This recipe can be easily modified. I use 1/4 soya flour
and rest regular flour.
I use 1 table apple sauce and 1 table less of oil.
When I use fruit I save a bit of the flour mixture and roll
the fruit in that before adding it to the yogurt mixture.
