Ingredients:  
Assorted greens and red onion. Other salad toppings as desired.
6-8 T. olive oil
2 T. red wine vinegar or sherry vinegar
2 t. Dijon mustard
1 medium clove garlic, peeled and mashed
salt
freshly ground pepper

Directions:
Directions:
Combine oil, vinegar, mustard and garlic in a small jar. Cover and shake until well blended and smooth. Season w/ salt and pepper and chill. Bring back to room temp 30 min before making the salad. Shake again until smooth.
