Ingredients:  
1 large Vidalia or other sweet onion
3 thin zucchini
2 red peppers
fresh basil
extra-virgin olive oil
salt and pepper

Directions:
Directions:
Wash and thinly slice vegetables.
Heat skillet with oil to cover.
Lower heat to medium, add vegetables, salt and pepper to taste.
Saute until veggies are just tender.
