4 Cornish hens
1 tsp. fresh rosemary
6 garlic cloves, minced
1/2c. butter
1/4c. fresh parsley
salt and pepper to taste

lemon slices - for garnish

Directions:
Directions:
Preheat oven to 350F.
Blend rosemary, minced garlic, butter, parsley, pepper and 1/2 tsp. of salt (sea salt works very well-if you can find it).
Rub mixture on hens, lift skin and smear under so that pesto gets between skin and meat. Bake in oven for approximately. 45 minutes to an hour (depending on size of hens).
Garnish each hen with a slice of lemon.
