1 pound carrots, sliced 1/4" thick
2 tablespoons olive oil
1 large clove garlic, minced
1 teaspoon cumin
1/2-1 teaspoon dried crushed red chili peppers
1 teaspoon paprika
juice of 1 lemon
2 tablespoons fresh parsley, chopped

Directions:
Directions:
Steam carrots til just tender. Heat oil and add garlic and crushed red peppers. Cook til garlic is softened. Add cumin, paprika, and salt to taste. Add lemon juice, carrots, and parsley. Heat through and serve.
