1 cup instant rice
4 boneless skinless chicken breast halves
2 tbsp vegetable oil
2 tbsp fajita seasoning
1 tsp cumin
2 cups chunky salsa
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
8 burrito sized flour tortillas, warmed

Directions:
Directions:
Cook rice according to directions. Cut chicken into bite size pieces. In a large skillet stif fry chicken in hot oil 4-5 minutes or until no longer pink. Sprinkle with fajita seasoning and cumin. Stir in salsa and cooked rice. Divide rice mixture among tortillas. Top with both cheeses. Fold one side of tortilla over filling, fold in sides, roll up tortilla to make burritos.

** Note To warm tortillas, wrap in foil and heat in 375 oven for 10 minutes.
