1 C. brown rice
3/4 lb. chicken breasts, skinned,boned and cut into cubes
1 T. peanut oil
1 C. carrots, sliced
1 garlic clove, minced
1 C. green pepper strips
1 can (8 oz.) chunk pineapple, in juice
1 T. cornstarch
1/4 C. soy sauce
3 T. brown sugar
3 T. vinegar
1/2 tsp. ginger

Directions:
Directions:
Cook rice according to package directions. In a large skillet, brown chicken in peanut oil. Add carrots and garlic; stir and cook 1-2 minutes. Add green pepper and pineapple with juice. Combine cornstarch, soy sauce, sugar, vinegar and ginger; add to chicken mixture. Bring to a boil, stirring constantly until sauce thickens. serve over hot rice.
