3 c flour
3 c sugar
1 c shortening
1 c buttermilk
6 eggs, separated
1/2 tsp salt
1/4 tsp soda
2 tsp lemon or orange extract

Directions:
Directions:
Blend sugar & shortening. Add egg yolks one at a time & blend after each addition. Add extract. Sift dry ingredients together & add to first mixture alternately with buttermilk.
Begin and end with dry ingredients. Beat egg whites until stiff and carefully fold into mixture. Pour batter into 10" tube pan, greased and floured. Bake @ 350 for 1 hour & 10 minutes. Be sure top of cake is firm.
