1 Package of turkey sausage cut into 1 inch pieces
Bunch of spinach
1 Vidalia onion
6-7 sundried tomatoes chopped
Bunch fresh basil
1 can cannelloni beans
4-5 cloves garlic chopped
Olive oil
Parm. cheese
Bow ties or pasta of your choice

Boil water for pasta in large pot. In a skillet, heat olive oil (cover bottom) over medium high heat. Add garlic, onion, and bail. Cook until onions become clear (before garlic starts to brown). Add turkey sausage and sundried tomatoes and cook until turkey sausgae begins to brown. Add pasta to boiling water and cook until desired texture.
Add spinach and 2 tbsp. more olive oil to skillet and lower heat to medium. Cook until spinach has cooked down. Add can of beans and heat for 1-2 minutes. Season with salt, pepper and parm. cheese. Mix pasta and sausage and serve. If it is dry, add more olive oil to entire dish and sprinkle with parm. cheese.
