6 oz bittersweet (not unsweetened) or semisweet chocolate, chopped
3/4 cups (1 1/2 sticks) unsalted butter, diced
3 large eggs
3 large egg yolks
6 Tbls sugar
1/8 tsp salt
6 Tbls all purpose flour
Whipped cream (optional)

Directions:
Directions:
1. Preheat over to 350 and butter six 3/4 cup souffle dishes.
2. Over double boiler, melt chocolate and butter together until smooth. Cool to lukewarm.
3. Using an electric mixer, beat eggs, egg yolks, sugar and salt in a large bowl at high speed until pale yellow and thick, about five minutes.
4. Fold cooled chocolate into egg mixture.
5. Sift flour over and fold into mixture until well incorporated.
6. Divind batter equally among prepared dishes. Transfer to baking sheet.
7. Bake until set at edges but still soft in center, about 18 minutes.
8. Serve warm with whupped cream if desired.
