1 CUP QUICK OATMEAL
1 1/4 CUPS BOILING WATER
1 CUP SUGAR
1 CUP BROWN SUGAR
1/2 CUP SHORTENING
1 TSP VANILLA
2 EGGS
1 1/3 CUPS FLOUR
1/2 TSP CINNAMON
1/2 TSP SALT
1 TSP SODA

TOPPING:
3/4 CUP SUGAR
1/4 CUP CREAM
1 STICK MARGARINE
1 CUP COCONUT
1 CUP NUTS
1 TSP VANILLA

Directions:
Soak oatmeal in boiling water for 20 minutes. In a large bowl, cream sugars, shortening and vanilla. Add eggs; stir in oatmeal. Sift together flour, cinnamon, salt, baking soda and add to other ingredients. Bake in a 13x9x2" pan at 350 degrees for 35 minutes. (Sheet cake pan can also be used if you prefer a thinner cake.)

Topping: In a 2-quart saucepan, bring to a boil sugar, cream, and margarine. Add coconut, nuts and vanilla.

Spread over cake as soon as cake is done. Return cake to oven until topping is browned.
