1 1/2 c. sugar
1/8 t. salt
1/2 c. cornstarch
1 3/4 c. water
grated rind from 1 lemon
3 egg yolks
1/3 to 1/2 c. lemon juice
2 t. butter
1 baked pie shell

Directions:
Directions:
Combine sugar, salt, cornstarch and lemon rind in sauce pan. Add boiling water, stir to blend well. Cook over low heat for 7 minutes, stirring. When thickened add egg yolks, which have been slightly beaten and add 2 tablespoons hot filling. Blend in lemon juice and butter. Continue cooking 5 minutes. Remove from heat. Cool slightly and pour into baked shell. Cover with meringue.
