medium-sized asparagus - ends cut leaving 4"-5"
Boursin Cheese - room temperature
melted butter
fresh lemon juice
dry-cured prosciutto - keep cold until ready to use
freshly-grated Parmesan cheese (Don't use packaged, pre-grated)
flaky sea salt or kosher salt
ground pepper to taste

Preheat oven to 375F.
Parboil asparagus very quickly so that it is still crisp. Rinse with ice cold water and dry. Spread a thin layer of Boursin cheese on 1 slice or 1/2 slice (depending on size of asparagus) prosciutto. Wrap the prosciutto around the asparagus leaving the tip exposed. Lay asparagus in single rows on a cookie sheet. Brush with butter and roll each spear in Parmesan cheese. Sprinkle with salt and pepper and squeeze lemon juice over top. Cook for 15 minutes and then broil for 1 to 2 minutes. Watch closely so that they don't burn! Separate spears and serve immediately. Yummy!
