4 cups dessicated coconut
1 tsp. vanilla
1/2 tsp. salt
1 can sweetened condensed milk
(Almond flavoring is a nice addition.)

Directions:

Mix well all the ingredients. Drop by teaspoon onto cooky sheet. Bake at 350 until just lightly brown on top.

Christmas Variation: When the cookies are removed from the oven, make a small indent in the center. Add a touch of the green Christmas wreath cookie mix (see that recipe) and decorate with 2 or 3 red hot cinnamon candies.

Note: Do not use the sweetened shredded coconut.
The finely shredded unsweetened kind that was available in Tonga can usually be purchased by the pound from a local bakery.
