1/2 cup shortening 1 1/2 cups brown sugar 1 egg 1 cup buttermilk 1 tsp. soda 2 cups flour 2 to 3 cups cut up rhubarb 1/2 cup sugar mixed with 1 tsp. cinnamon
Cream together shortening and brown sugar. Add egg and buttermilk. Mix flour and soda then add to the above mixture. Fold in the rhubarb pieces. Put into a greased square cake pan. Sprinkle the cinnamon/sugar mixture on top. Bake at 350º for 30 to 35 minutes. Serve with cream, or vanilla ice cream.
