1 egg 1/2 c. sugar 2 T. flour 1 1/4 t. baking powder 1/8 t. salt generous dash of cinnamon 1 t. vanilla 3/4 c. chopped apples 3/4 c. chopped pecans
Beat egg until light; gradually beat in sugar. Stir in flour mixed with baking powder and salt. Add vanilla, nuts, apples and cinnamon. Mix well and bake in buttered 9" pie plate for 25-30 minutes in 350º oven. Spoon into serving dish; top with whipped cream and nuts or vanilla ice cream. Makes small amount. Can be doubled.
