1sm pkg. lemon Jell-O
1 C boiling water
2 Tbsp lemon juice
8 oz cream cheese
1 C sugar
1 tsp vanilla
1 can chilled evaporated milk
3 pkgs. graham crackers
1/2 C melted butter

Directions:
Directions:
Dissolve Jell-O in boiling water. Add lemon juice and let cool. (Be careful here, you donít want it to gel) Cream together cream cheese, sugar and vanilla by hand. Add cooled Jell-O. Mix well. Whip evaporated milk until peaks form and fold into Jell-O mixture. Make crust from cracker crumbs and butter and pack 2/3 into 13x9x2 pan. Pour filling onto crust and top with remaining crumbs. Chill several hours.

This is a light and fluffy version, good for summer. I like to add fresh fruit-strawberries, just before pouring mixture onto crust.
