1 cube butter or margarine
3 T. flour
3 cups milk
8 oz. pkg. cream cheese, softened
Salt and pepper to taste

Add milk and bring to boil to thicken, stirring constantly. Remove from heat; add softened cream cheese and stir until smooth. Pour over vegetables. Bake at 325º for 25 to 30 minutes.

Variation: Use bags of frozen vegetable combos (California mix) Pour 2 cans cream of celery soup and 1 cup sour cream over vegetables. Top with 1 cup grated cheese and 1 cup buttered bread crumbs. Bake at 375º for 10 minutes, uncovered, then cover and bake for 10 more minutes.

“Vegetables are a must on a diet. I suggest carrot cake, zucchini bread, and pumpkin pie.”
