2 tsp. olive oil
4 small boneless, skinless chicken breast halves (l lb.)
2 c. broccoli florets
1 can cream of chicken soup
1/4 lb. Velveeta Cheese, cut up
2 c. minute white rice, prepared according to package instructions

Directions:
Heat oil in large skillet on medium high heat. Add chicken; cook 7 minutes, turning after 3.5 minutes. Add broccoli, stir. Stir in soup and Velveeta until well blended. Reduce heat to medium. Simmer 7 minutes or until chicken is cooked through. Serve over hot cooked rice.
