Dark lettuce greens
4 chicken breasts
Bullseye original BBQ sauce
red onion
Cilantro
black beans
tomatoes
baby corn
tortilla chips
jicama
avocado
Opt. olives
Ranch Dressing

Directions:
I usually boil the chicken, so if you start with chicken on the bone or not, just boil the chicken for about 40 minutes. Drain the chicken and when cool enough to work with pull the chicken from the bone or just shred the chicken. (This can be done ahead of time or use some chicken leftovers.)
Warm the chicken in a pan with the desired amount of BBQ sauce, when you are ready to eat.

Tear the lettuce into pieces. Feel free to mix any lettuce you like (red, green, romaine). Drain, cut and slice the remaining ingredients as you would prepare any other salad. Leave buffet style so each can add what they would like or combine in one big bowl Sprinkle with crushed tortilla chips and BBQ chicken and serve with ranch dressing.

You could also grill the chicken in a pan and that would shorten the prep time considerably. This recipe is so adaptable for one person or for a crowd. I always get compliments on this salad.
