2 1/2 potatoes peeled and sliced
6 T butter
2 T parsley
1 cup grated Swiss or 1/4 lb jack cheese
1 tsp salt
1/8 tsp pepper
1 1/4 cups boiling beef broth

Directions:
Directions:
Preheat oven to 425 -- butter 2 qt baking dish. line dish with potatoes sprinkle with parsley, salt, pepper, cheese -- dot with butter -- layer potatoes, etc. again -- Pour boiling broth over and bake in oven for 55-60 minutes.
