3 eggs
1/2 c. lemon yogurt
2 tbsp. fresh lemon juice
1 c. sugar
1 1/2 c. flour
1 tsp. finely shredded lemon peel
1/4 tsp. baking powder
1/8 tsp. baking soda

Directions:
Directions:
Allow butter, eggs and yogurt to stand at room temperature for 30 minutes. Grease and lightly flour an 8X4X2 inch loaf pan and set aside. Combine flour, baking powder and soda. Set aside.
In a mixing bowl, beat butter on medium to high speed for 30 seconds. Gradually add sugar, beating about 10 minutes until light and fluffy. Add eggs, one at a time, beating well after each and scraping bowl and beaters frequently. Add dry ingredients alternately with lemon yogurt, beating until combined. Add lemon juice and lemon peel to batter, mixing well Pour into prepared pan and bake at 325 degrees for 60 to 75 minutes until a wooden toothpick inserted in center comes out clean. Cool for 10 minutes and remove from pan.
