25 medium stalks of asparagus
4 c. chicken stock
4 tbsp. butter
1/2 tsp. onion powder
1/2 tsp. white pepper
1 tsp. tarragon
1 c. heavy cream
salt to taste

Directions:
Directions:
Chop asparagus, putting aside the tips. In a large saucepan, melt the butter and saute the asparagus over low heat for 10 minutes. Pour asparagus and butter into blender and puree. Return mixture to saucepan and add chicken stock, onion powder, pepper, tarragon and salt. Simmer for 30 minutes. After 20 minutes, add the saparagus tips. Let the soup cool a bit and stir in the cream. Serve immediately
