2 c. zucchini, washed, cut up and processed in blender or food processor until pureed
3 eggs
1 c. vegetable oil
2 c. sugar
1 tsp. vanilla
3 c. flour
6 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. raisins or nuts, if desired

Directions:
Directions:
Mix first five ingredients with electric mixer or by hand until well blended. In separate bowl. sift flour with salt, cinnamon, soda and baking powder. Add gradually to zucchini mixture, mixing well. When blended, add nuts or raisins if desired. Pour into two 9X5X3 greased and floured baking pans and bake at 325 degrees for 60 to 75 minutes until a toothpick inserted in the center comes out clean
