5 tbsp all-purpose flour
3 cups milk, 1/2 cup potato water, (from mashed potato recipe)
1 tsp ground black pepper and 3/4 tsp salt

Directions:
Directions:
Place skillet with 2-3 tbsp of the oil and browned bits, (reserved from frying Chicken or Bacon ), over medium-high heat. Whisk in flour, whisking constantly, 1 1/2 minutes. Slowly add milk and potato water, whisking constantly; stir in pepper and salt. Continue cooking, whisking constantly to keep from sticking about 8-10 minutes, or until thickened. If it thickens too early, slowly add more milk.

Serve over mashed pototoes, chicken fried steak, toast or biscuits. This has been a favorite of the Williams family for years. For a variation, add crumbled crisp bacon, browned crumbled hamburger or a jar of sliced beef.
