CRUST:
2 c. flour
1 c. margarine (not butter)
3/4 c. powdered sugar
FILLING:
4 c. rhubarb, diced
4 eggs
2 c. sugar
1/2 t. salt
1/4 t. almond extract, optional
4 drops red food coloring, optional

Directions:
Directions:
Combine ingredients for the crust until very fine. Press into 9x13" pan that has been sprayed with non-stick oil. Bake at 350 degrees for 20 minutes
Put rhubarb over baked crust. Slightly beat eggs; add remainder ingredients and mix well. Pour evenly over rhubarb. Bake at 350 degrees for 45 minutes or until set.
