* 1 TBSP. each olive oil & butter
* 2 minced garlic cloves
* 2 minced shallots
* 1 cup vodka of choice {not flavored}
* 1 cup chicken stock
* 1 {28 ounce} can crushed &
Italian seasoned tomatoes
* 1/2 cup heavy cream
* 12 ounces penne rigate pasta/cooked al dente
* fresh basil/julienne strips
* 1 1/2 cups shredded/cooked chicken {optional}

Directions:
Directions:
*Heat the oil & butter in a large heavy skillet.*Gently saute the garlic & shallots for 3 to 5 minutes.*Add the vodka & reduce by 1/2 {about 2 to 3 minutes}.*Add the broth & tomatoes,bringing the sauce to a bubble,then reduce the heat to simmer.*Season with salt & fresh pepper to taste.*While the sauce finishes,cook the pasta,make some salad & get your bread of choice ready.*Stir the cream into the vodka sauce & bring to a bubble again,then remove it from the heat.*Drain the pasta,toss with the sauce,optional chicken, & basil & serve immediately.

This one of my Dad's favorite dishes. Whenever he makes pasta & is on the way to the sink to drain it he yells "LADY WITH A BABY!" This method always seems to make the pasta taste better !
