FOR CHICKEN: * canola oil for frying * 2 pounds chicken tenders * 1 1/4 cups flour * 4 beaten eggs * 1 1/2 cups bread crumbs * 1 1/2 cups finely chopped pecans * 1/2 tsp. nutmeg * the zest of 1 orange * salt & fresh pepper to season FOR DIPPING SAUCE: * 1/2 cup maple syrup * 1/2 cup barbeque sauce * the juice of 1 orange
*Whisk the dipping sauce ingredients together & set aside.*Season the chicken with the salt & pepper.*Set out 3 shallow dishes:put the flour in 1,the egg in 1,combine the bread crumbs,pecans,nutmeg & zest & put in 1.*In batches,coat the tenders in flour/egg/bread crumb mixture.*Fry in small batches 'til golden,about 3 to 4 minutes each side.*Transfer to paper towel from oil when they're done.*Serve immediately with warmed or cold sauce.
