8-10 potatoes
1 1/2 c. grated cheddar cheese
1 1/2 tsp. salt
1/4 tsp. pepper
2 cans cream of chicken soup
1 pt. sour cream
1/2 c. chopped green onions
paprika (optional)

Directions:
Directions:
Boil 8 to 10 medium potatoes in jackets, do not overcook. Peel and shred in a large bowl (I use the bosch shredder). Stir in soup, sour cream, onion, 1 cup cheese, salt and pepper. Put in a 9x13 baking dish and top with remaining cheese, sprinkle with paprika. Bake uncovered at 350 for 30 to 40 minutes. Can be made a day ahead and refrigerated.
