4 lg. ripe tomatoes
1 lb. Brie cheese
1c. chopped fresh basil
3 cloves minced garlic
1c. olive oil
1 1/2 lbs. linguine
salt and pepper
grated Parmesan cheese

Directions:
Directions:
Peel and seed tomatoes and cut into 1/2 cubes.
Remove the rind from the Brie and discard. Tear Brie into small pieces.
In large bowl, combine tomatoes, Brie, basil, garlic, 1 c. olive oil, salt and pepper to taste. Cover and set aside for 2-4 hours at room temp.
Cook linguine until al dente. Drain linguine and toss immediately with basil and Brie sauce. Serve with Parmesan cheese.
