3 cups cubed boiled potatoes
1 tsp. finely chopped onion
salt and pepper to taste
1/4 cup French Dressing
4 hard cooked eggs
1/2 cup cubed cucumber
1/2 cup diced celery
mayonnaise
2 tsp. Durkee's Famous Sauce
(if you can find it)

Peel and cube potatoes. Cook until just tender. Watch carefully. Cool and lightly toss with salt and pepper, onion, and french dressing. Chill an hour or two. Then toss lightly with 4 chopped hard cooked eggs, celery, cucumber (seeds removed), a dash of dill, a little sweet minced pickle, and a little finely grated carrot. Combine mayonnaise with Durkee's and toss all together gently. Amount of mayonnaise is cook's choice. Sprinkle with paprika before serving.

"I've been making this potato salad for 50 years. You can be very creative with it and everyone will still enjoy it. I personally feel the Durkee's sauce gives it that special tang!" (I buy Durkee's at A&P in Branford, CT)
Edith's note: Eleanor is a very dear and loyal friend since 1946, when we met as freshman at New Haven State Teachers' College--now Southern Connecticut State University. Her sparkling smile and lively personality are a joy to everyone. Eleanor retired from the Branford School System after teaching for many years.
