Ingredients:  
3 cups chicken, cooked and diced
2 cups celery, diced
2 Tbsp. minced onion
1/2 cup sliced almonds (optional)
1 cup diced water chestnuts (optional)
(can use mandarin oranges)
Combine and add a mixture of:
1 cup mayonnaise
3 Tbsp. lemon juice

Directions:
Directions:
Season to taste and sprinkle some shredded cheese into mixture. Place in casserole and bake at 400 F. for 25 to 30 minutes. Top with 1/2 cup or more of shredded cheese and crunched potato chips.
