2 lbs. sweet potatoes
2/3 cup sugar
1 Tbsp. cornstarch
1 tsp. salt
1/2 tsp. grated orange peel
1 cup orange juice
2 Tbsp. butter

Directions:
Directions:
In saucepan, stir together sugar, cornstarch, salt and peel. Slowly stir in orange juice. Add butter. Cook, stirring constantly, until mixture thickens and boils. Boil and stir one minute. Pour over sweet potatoes (cooked and peeled). Cover and bake at 350 F. until hot. Add pecans, if you wish.
