1 egg white
1/2 cup white sugar
1 tsp cold water
1/2 cup brown sugar
1 tsp vanilla
1 tsp cinnamon
4 cups whole almonds (salted), or add 1/2 tsp salt if nuts are unsalted

Directions:
Directions:
Preheat oven to 250 . Lightly grease a 10 x 15 cookie sheet. Lightly beat eggs white and water until frothy but not stiff. Add vanilla. Add nuts and toss until well coated. In a separate bowl, add sugars and cinnamon, mix well. Pour over nuts and mix until well coated. Spread evenly onto prepared pan and bake for 1 hour, stirring occasionally until golden. Allow to cool, then store in an air tight container. These will last for about 1 month in a mason jar.
