Mom makes 1 1/2 times this recipe for a 9-inch pie. She cooks it in the microwave, stirring often, and puts cooled filling in pre-baked pie shell.

This is my favorite pie. My second favorite is squash pie. It is made with patty pan squash and seasoned with cinnamon (like apple pie), in addition to sugar, flour and butter.
