Ingredients:
8 to 10 Jonathon Apples
2 cups water
1 cup sugar
3 T. red-hot cinnamon candies
red food coloring
Dates, marshmallows, and nuts.
lettuce leaves
whipped cream

Directions:
Directions:
Peel and core apples -- (keep them whole).
Bring to boil: water, sugar and cinnamon candies, stirring to dissolve. Add a little red food coloring. Put apples in a pan. Pour sugar mixture over the apples. Simmer slowly on stove top, turning occasionally. Or they may be baked in a moderate oven for 45 minutes instead, but they should be turned to distribute the liquid through the apples from time to time, so the apples will turn red, but still keep their shape. After the apples are cooked, cool and chill in refrigerator. Then stuff the centers with a mixture of chopped dates, marshmallows and nuts. (These may be frozen for future use if desired.)

Serve on a lettuce leaf topped with whipped cream.

Personal Notes:
Personal Notes:
This is almost a dessert -- a very festive salad! As a child I was always excited when mother would make these for special holiday salads.

"I know the look of an apple that is roasting and sizzling on the hearth on a winter's evening, and I know the comfort that comes of eating it hot, along with some sugar and a drench of cream... I know how the nuts taken in conjunction with winter apples, cider and doughnuts, make old people's tales and old jokes sound fresh and crisp and enchanting."
~~Mark Twain
