Sweet Dough:
2 pkg. yeast
2 c. milk
2/3 c. sugar
2 tsp. salt (canning salt)
3/4 c. likewarm water
2 egg yolks, beaten
3/4 c. butter (melted & cooled)
1/2 tsp. nutmeg
8 c. flour (approx)

Apricot filling: 2 pkg. dried Apricots, 3/4 c. sugar, 1 tsp. cinnamon.
Prune filling: 1 (2 lb.) bag dried prunes, 1/2 c. sugar, 1 tsp. cinnamon.
Dry Cottage cheese filling: 12 oz. dry cottage cheese, 1/4 cup cream, 1/2 c. sugar, 1 tsp. cinnamon, 1 egg.
Poppy Seed: 1 c. ground poppy seed, 1/2 c. sugar, 1 c. milk, 1/2 c. cream, (add more milk and sugar if nec.) 1/2 tsp. cinnamon, 2 tbsp. butter, pinch of salt.

Dissolve yeast in 1/2 cup warm water & 1 tsp. sugar. Scald milk; add sugar and butter; cool to likewarm. Add salt & well-beaten yolks;mix. Add 3 cups flour; mix; add yeast; mix, then add enough additional flour to make a soft dough (around 5 c.). Let rise twice. Roll out dough to 1/4 inch thickness; cut into 3"x3" squares. Put a teaspoon of filling in center, bring up the opposite two corners and pinch together, then other two corners & pinch together. Place biscuit in a well-greased pan, do not crowd. Brush between with melted butter and let raise. Brush tops with a mixture: 1 tbsp. sugar, 2 tbsp. cream and beaten white of one egg. Bake in oven 20 min. at 350 degrees. Sprinkle generously with powdered sugar (while hot).
