4 cups thinly sliced zucchini (3 skinny zucchini)
2 med. tomatoes cut into wedges
1/4 c thinly sliced green onion
3/4 c. white wine vinegar or cider vinegar
2/3 c. extra-virgin olive oil
1 garlic clove minced
2 tbs. sugar
1 tsp. salt
1 tsp. dried basil
1/8 tsp. pepper

Directions:
Directions:
In a serving bowl, combine the zucchini, tomatoes, and onions. In a jar with a tight fitting lid, combine the remaining ingredients, shake well. Pour over the zucchini mixture and toss gently to coat. Cover and refrigerate for at least 2 hours (2 days ahead is better). Serve with a slotted spoon.
